Kitchen hood suppression · NFPA 96 and NFPA 17A · California work by Hedrick Fire Protection (C-16 and C-10 licenses)
Your hood system runs on a six-month clock
Twice a year. That's how often a commercial cooking suppression system has to be inspected under NFPA 96 and NFPA 17A. Skip a visit and the service tag on your system falls out of date, and anyone who walks the cook line can see it.
A service visit follows the system from end to end. The technician looks at the nozzles over each appliance, the detection line, the agent cylinder and the manual pull station, then makes sure the system will still trip and discharge the way it was designed to. Fusible links get swapped. NFPA 96 calls for replacing metal-alloy links at least every six months, because heat and grease wear them down. The visit ends with a new dated tag.
Then there's the portable unit. A kitchen with a suppression system also needs a Class K extinguisher for cooking oils and fats, and wet chemical Class K units need a hydrostatic test every five years (dry chemical units go twelve). We cover that work on our fire extinguisher annual certification page for Los Angeles County.
UL 300 fire kitchen system upgrades
UL 300 is the test standard for pre-engineered wet chemical systems that protect cooking appliances. Older dry chemical systems don't meet it. Is your hood still running one? If so, it's time to plan an upgrade.
We install new UL 300 wet chemical systems, upgrade existing ones and remove systems that are coming out of service. If you're remodeling, adding a fryer or moving appliances under the hood, bring us in early. Nozzle coverage has to match the appliances that are actually there. Before any new install or upgrade, ask your local fire marshal which code edition and permit steps apply to your address.
Which fire agency covers your kitchen?
Los Angeles County has 88 incorporated cities. They don't share one fire prevention office. Start with your address:
- Unincorporated areas and County Fire contract cities. The Consolidated Fire Protection District of Los Angeles County serves all unincorporated areas plus 59 contract cities in the county. Its Fire Prevention Division does annual business inspections, new construction field inspections and minor plan checks through North, Central and East regional units.
- City of Los Angeles. The Los Angeles Fire Department has its own Fire Development Services section. It handles plan review, permit approvals and new construction field inspections inside city limits, and you request those through inspect.lafd.org.
- Cities with their own bureau. Some cities run their own fire prevention bureau. Burbank is one.
Code editions differ too. The county's fire code is Title 32 of the County Code, built on the 2022 California Fire Code, and contract cities such as Santa Clarita adopt it by reference. In December 2025 the City of Los Angeles took up a proposal to move to the 2025 California Fire Code with city changes. Check before you build.
Hood and restaurant work we've documented
Deadlines happen. In one case, a San Diego restaurant had 30 days from the fire marshal to get its hood system compliant. Closer to home, in La Puente, inside Los Angeles County, we handled bilingual, fast-turnaround fire extinguisher service for a restaurant facing an inspection.

Fire kitchen questions
How often does a kitchen hood suppression system need service?
Every six months. NFPA 96 and NFPA 17A set a semi-annual inspection, and metal-alloy fusible links are replaced at least that often.
Does my old dry chemical system meet UL 300?
No. UL 300 covers pre-engineered wet chemical systems, and older dry chemical systems don't meet that standard.
Who inspects restaurants in my part of Los Angeles County?
It depends on your address. County Fire's Fire Prevention Division does annual business inspections in unincorporated areas and its contract cities, while the City of Los Angeles and cities like Burbank have their own fire departments, so confirm with your local fire marshal if you're not sure.
Do I still need an extinguisher if the hood has a suppression system?
Yes. Kitchens with suppression systems also need a Class K portable extinguisher.
