New or changed hood system? Plan for two tests
Fire kitchen service in Riverside County covers two jobs: keeping an existing hood system on its six-month schedule, and getting a new or changed system through its tests. Start with the second one. Where the Riverside County Fire Department's Office of the Fire Marshal handles your project, a commercial cooking suppression system must be pre-tested before the county's acceptance test. So that's two tests. We run the pre-test, so problems turn up before the inspector arrives. Call (213) 568-0188 or email socal@1profire.com.
Replacing an old system? Expect the same pre-test and acceptance steps as a new install, and confirm with the fire marshal's office before you schedule the work. Adding a fryer or charbroiler under an existing hood needs a coverage check too, because nozzle placement depends on the appliances underneath.
What happens every six months
NFPA 96 and NFPA 17A put commercial cooking suppression systems on a semi-annual inspection. Twice a year, every year. On each visit, a technician checks the agent cylinder and its pressure, cleans grease off nozzle caps, confirms the nozzles still line up with the appliances, tests the manual pull station and checks that fuel or power to the cook line shuts off when the system trips. Metal-alloy fusible links get replaced at least every six months under NFPA 96. Then the system gets a fresh tag. Inspectors look for it.
The Class K extinguisher by the line
A kitchen with a hood suppression system also needs a Class K portable extinguisher for cooking oil and fat fires. It gets annual maintenance and a hydrostatic test every 5 years. In California, that work has to be done by a firm and technician licensed by the State Fire Marshal under Title 19. Your other extinguishers are covered on our fire extinguisher service in Riverside County and hydrostatic testing pages, and fire extinguisher training handles the annual OSHA refresher for staff who are expected to use them.
Still on a dry chemical system?
UL 300 is the test standard for pre-engineered wet chemical systems that protect cooking appliances. Older dry chemical systems don't meet it. If your hood still has one, ask us to quote a UL 300 upgrade. For planning, treat the upgrade like a new install: expect the pre-test and acceptance steps above where the county reviews your kitchen, and confirm with your fire marshal.
Find your fire marshal before you book
Riverside County splits fire prevention across several offices. Know yours first.
- County Office of the Fire Marshal: plan review and construction inspection for unincorporated areas and contract cities, plus fire and life-safety inspections of state-regulated occupancies.
- Own fire marshal, County Fire response: Banning, Beaumont, Indio, Lake Elsinore, Menifee, Moreno Valley, Temecula and Wildomar. Coachella's City Fire Marshal Office handles prevention, plan review and inspections, with permits filed through the county's RivCoPlus portal.
- Own fire department: Blythe, Calimesa, Canyon Lake, Cathedral City, Corona, Hemet, Murrieta, Palm Springs and Riverside. Idyllwild Fire Protection District is a separate agency. Ask that city or district how kitchen inspections work.

Which fire code year applies
Ordinance 787.10 adopted the 2022 California Fire Code, with local amendments, for unincorporated Riverside County. Cities adopt their own. Ordinance 787.11, which would adopt the 2025 California Fire Code and the California Wildland-Urban Interface Code, was proposed to take effect January 1, 2026. Confirm whether it was adopted, and which edition your city uses, before plans go in.

Riverside County kitchen hood FAQ
How often is a hood system serviced?
Every six months. That's the NFPA 96 and NFPA 17A interval, and fusible links get replaced at least that often.
Who inspects my kitchen?
It depends on your address. The county Office of the Fire Marshal covers unincorporated areas and contract cities, but Banning, Beaumont, Indio, Lake Elsinore, Menifee, Moreno Valley, Temecula, Wildomar and Coachella run their own fire marshal offices. In a city with its own fire department, such as Corona, Hemet or Palm Springs, ask that department.
Is my dry chemical system still OK?
Dry chemical systems don't meet UL 300. Ask your fire marshal what your kitchen needs, and we'll quote a wet chemical upgrade.
Who does the work?
Hedrick Fire Protection does 1 Pro Fire's California work. It holds C-16 and C-10 contractor licenses.
